Recipe for Hutspot with Onion Chutney

The carnival is starting again from today in the south of the Netherlands. Whether you come from Oeteldonk, Kruikenstad, D´n Haozenpot or Schoenlapperslaand, you must provide a “good soil” in order to fully enjoy each day of carnival. That’s why we have put together a simple recipe for a hearty meal: Hutspot with Onion Chutney! 

Ingredients (for 4 persons):

  • 500gr carrots

  • 3 onions

  • 1 kg potatoes (floury)

  • 100gr Onion Chutney

  • 500gr lean bacon

 You will need:

  • a kitchen pestle

Preparation:
Peel the potatoes and cut them into pieces. Clean the carrots and grate them clean. Before you cook the potatoes and the carrots, you first need to clean the onions en cut them into rings. Then add them to the potatoes and the carrots and cook until they are all well cooked. Meanwhile, cut the bacon into small pieces and fry them brown.

Mash the potatoes, carrots and onions when they are ready. Then add the fried bacon. You can add the Onion Chutney in two ways: you can mix it directly in the hutspot or you can serve it in the gravy dimple.
